Why is my limoncello bitter?
The most likely cause is white pith attached to the zest. The colored outer zest supplies aromatic oil; the white layer underneath is bitter. Why is my limoncello cloudy?
Cloudiness is commonly suspended citrus oil, not spoilage. Excellent limoncello can be clear or opaque. Filter to remove zest and sediment, but do not judge quality by transparency alone. Why does it taste harsh or too alcoholic?

Why is my limoncello too sweet?
Sugar is much harder to correct after blending than excess proof. If you still have unsweetened infusion, make a small measured blending trial before changing the full batch. Otherwise, use the calculator cautiously; adding plain alcohol or water can reduce sweetness but may also flatten the lemon flavor. Ben’s original alcohol-content notes warn that rescuing an overly sweet batch rarely ends as cleanly as preventing one.
Why is the lemon flavor weak?
Use fresh aromatic zest, avoid pith, and allow the infusion to finish. Higher-proof neutral alcohol generally extracts zest oils more efficiently, while old fruit or too little zest produces a weaker base. Why is it freezing or turning slushy?

Why is there sediment or oil on top?
Fine zest particles and lemon oil can remain after coarse straining. Filter progressively rather than forcing the liquid through a clogged paper filter. A small oil collar can be natural; visible solids can be removed with another careful pass. Filtration improves polish, but it cannot repair bitterness already extracted from pith.
What should I do before changing the full batch?
- Measure a small sample.
- Record the amount of every addition.
- Chill and taste the sample at serving temperature.
- Scale the successful ratio to the remaining batch.
- Rest the adjusted batch before judging it again.
